I have mastered the art of moist, soft, 'can't believe it's gluten-free' cakes...I'll often bring gluten-free samples to large tasting groups to see if someone can point out a difference....but I trick them everytime! and for those that have eaten a lot of gluten-free cake - know what a big deal it is to NOT be able to taste a difference in flavour and especially texture!!! So I'm a proud to say I CAN!
